Nuestro coche tiene sonda de temp de aceite?
Me parecería raro que no la llevase teniendo en cuenta lo crítico que es para la supervivencia del turbo...

Not correct.
The engine only have a oil- pressure- contact, in case of low pressure a red light will show in the dash. (this is not a pressuer meter from 0 bar to 5 bar or so- it is only a contact)
(But in this case it is time over (in most cases)- if you not stop the engine quickley engine will stop himself by "major problem".

I'm just create a oil-temperature meter by a special sensor. I mount it in my car 3 weeks, it work exactly.
I check the oil- temperature before oil go inside engine, not in the oil dump.
some Kit will be cost 119 Euro includet mounted sensor, display and wire set (+ shipping)
The place who you mount the display is yours.

(The special sensor mountet in the "holder") will be cost 50 Euro.

The sensor mounted in the oil- filter- cap (special lenght, special diameter)
